Pumpkin Walnut Cheesecake
(makes 2 10" cakes)
 


1 tsp cinnamon
1/4 cup butter
1 1/2 cups graham cracker crumbs
1/3 cup granulated sugar

Mix these ingredients well, then press into bottom and sides of buttered spring-form pans.

 

3 lbs cream cheese
1 1/2 cups brown sugar
1 1/2 cups granulated sugar
1 cup heavy cream
9 eggs
3 lbs pumpkin
1 tbs cinnamon
1 tsp nutmeg
1 tsp allspice
1 tsp ground cloves

Soften cream cheese (no lumps), mix with both sugars, add cream gradually, scraping sides of bowl. Add one egg at a time. Add pumpkin and spices until blended. Do NOT overmix. Pour batter into pans over crust and bake at 350 for one hour. Turn off oven, and let cake sit in oven for 30 minutes.  

 

2 cups chopped walnuts
1/4 lb butter
1/2 cup brown sugar


Melt butter and brown sugar.  Add walnuts. Pour mixture on top of cakes after 30 minutes of cooling.  Place in 400 degree oven to brown top.
